Millau
Millau, in Aveyron, is nowadays also known for the nearby, almost 300 meter high Millau Viaduct. Around the town is a handful of campsites. Along the river Tarn, from Millau to the north towards Le Rozier, there are also more than twenty campsites. If you are by car and your final destination is Spain, Millau is in a pretty favorable place for an overnight stay. (Or several nights - there's plenty to see and do for that.)
